Traditional dessert in gluten free version

Gullón Chip Choco gluten free
Cream
200 ml
Milk
50 ml
Cane sugar
75 g
Egg yolk

Mascarpone
250 g
Gelatine
1 sheet
Coffee
100 ml
Sugar
20 g
Amaretto liquer
10 ml
Cocoa powder to dust

Step by step

  1. Add cream, milk and sugar to the pot and let it boil.
  2. Beat 1 whole egg in one bowl with one yolk and add to the pot. Stir and cook for a few minutes.
  3. Add mascarpone to the bowl and add the cooled cream mixture.
  4. Add a gelatin slice to the cold water and let it hydrate. Then add to the bowl.
  5. Leave the mixture in the refrigerator overnight.
  6. Hydrate the gelatin plate with cold water.
  7. Add drained gelatin to the mixture and let it rest in the fridge for 24 hours.
  8. Remove from the refrigerator and whisk the mixture over.
  9. You can use a spoon or a pastry tipper to serve.
  10. Soak Gullón Digestive biscuits in a mixture of coffee and amaretto and alternate layers of biscuits and cream in a serving glass. At the end, sprinkle with cocoa and decorate the Gullón biscuit with pieces of chocolate.
