Gullón Gluten Free Chip Choco
4 cookies
Apricots
12 pcs
Whipping cream
200 g
Gelatin sheets
2 slices
Lemon
1 pcs
Fresh rosemary
1 spring

Step by step

  1. Wash the apricots, cut them in half and remove the stones. 
  2. Blend 8 apricots with an immersion blender together with the juice of one lemon. 
  3. Soak the gelatin slices in water. When they are soaked in water, add them to the apricot mixture. Then add the whipping cream and beat well until smooth. 
  4. Add a Gullón Gluten Free Chip Choco cookie to the bottom of the serving glasses, add a layer of apricot cream on top. Let it sit in the fridge for at least 4 hours. 
  5. Gently fry the slices of the remaining apricots together with a sprig of rosemary in a pan. Decorate a cream glass and serve.
